Today is National Fruitcake Toss Day! This silly national holiday is supposed to be a reminder to throw out the extra food you still have left from the holidays, in part because it’s old now and in part because it’s probably unhealthy food. This week, we’re tossing out the fruitcake and replacing it with a healthier alternative: zucchini cake! While it’s still a delicious dessert, this cake is packed with zucchini to help you ease into eating healthy. The cream cheese frosting is also made with Greek yogurt to give you a healthier alternative! Your family will never complain about eating their vegetables again! This week, we’re asking our in-home care patients and our in home care providers in Colorado to try a healthy alternative to ring in the new year with our Spiced Zucchini Cake Recipe!

Zucchini Cake Recipe

What you’ll need:

  • 2 cups flour
  • 2 tsp. Cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. Salt
  • ¼ tsp. Baking powder
  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 3-4 average sized zucchini, shredded.

Optional: 1 cup of your favorite chopped nuts or dried fruits

Instructions

Preheat oven to 375 degrees Fahrenheit. Spray cooking oil on a 9x13” pan. Combine all dry ingredients except dried fruit, nuts, and zucchini in a bowl. Set aside. In a separate bowl, beat eggs until frothy and add in wet ingredients. Mix. Slowly mix dry ingredients into the bowl. Squeeze excess water from shredded zucchini in a paper towel. Fold in zucchini and chopped nuts or dried fruit if you so choose. Pour into pan and bake for 40-45 minutes. Let cool completely before frosting.

Frosting Recipe

What you’ll need:

  • 5 oz. cream cheese
  • ¼ cup plain greek yogurt
  • 4 tbsp powdered sugar
  • Vanilla extract to taste

Instructions

Beat all ingredients together. Let rest until it’s time to frost the cake.
